Maccheroni al ferretto with “ortolana” sauce

450 g of Maffei Maccheroni al Ferretto
1 white onion
1 stick of celery
1 red pepper
1 courgette
Evo oil
Salt and pepper
1 sprig of basil

Peel the onion and cut it finely. Wash the celery stalk and cut it into thin slices. In a large pan, put plenty of oil, onion and celery. Brown them gently for at least 20 minutes. Meanwhile, wash and peel the pepper and courgettes, and cut them into thin slices. After 20 minutes, add them to the sauce and add a glass of hot water. Let the vegetables simmer until they are soft and, with the help of scissors, cut them into very small pieces. Raise the heat, season with salt and pepper and cook for a few more minutes. Set aside a couple of tablespoons of vegetables. Meanwhile, add a drizzle of oil to the remaining vegetables and blend them to obtain a thick cream. Cook the Maccheroni al Ferretto in plenty of salted water, then drain and add them to the cream obtained. Add a sprinkling of parsley and stir well. Serve and decorate with the vegetables kept aside and with parsley leaves.
